I’m not a big Halloween fan, but to celebrate the cozy feeling that it brings, I made these little jars! They’re filled with a simple chia pudding, a creamy sugar-free apple butter, and a fluffy yogurt.
This is such a decadent and easy breakfast to make the night before and bring with you on the go!
Chia pudding is my all time favorite quick breakfast and I make it way more often than I would like to admit…. But the real star of these little parfaits is definitely the Sugar-Free Cinnamon Apple Butter! A decadent and creamy butter that is perfect for baking, to put on top of your breakfast, on toasts or to simply eat with a spoon 😉 I like to make it in big batches and keep it in the fridge to use whenever I need it. Having healthy and delicious options in the fridge ready to go is key to keep a healthy and balanced lifestyle!
Ingredients:
For the chia pudding:
• 3 tbsp chia seeds
• 1/3 cup plant based yogurt (I used soy but you can use coconut too)
• 1/2 cup oat milk (again you can use whatever plant-based milk you prefer)
• 1/2 tbsp maple syrup
For the sugar-free apple butter:
• 1 apple
• 1/3 cup rice milk
• 2 tsp cinnamon
For the parfait:
• 1/2 cup plant based yogurt
• 2 tsp cinnamon
Preparation:
Let’s start by making the apple butter. Chop the apple in small cutes and place it in a small sauce pan with the milk and the cinnamon. Bring to a boil and cook at low heat for 6 minutes. Turn the heat off and blend it all until smooth.
To make the chia pudding, whisk together all the ingredients and let it sit in the fridge for at least 1 hour or overnight.
Start assembling the parfait layering the chia pudding with the apple butter and the remaining yogurt. Sprinkle with some cinnamon on top and enjoy!
