Sauteed Chicory and Beans Toasts

This tasty and easy recipe is another of my favorite quick lunches! If you know me, you know that I’m all about having quick and yummy options in the fridge ready to go. And the secret is always one…. meal prepping! During the weekend, or whenever you have a little bit of extra time, try to prepare a few vegetables, grains and legumes in big batches and keep them in glass containers in the fridge. This way you’ll always have healthy and yummy options!

Last Sunday I cooked some chicory and beans and now I can have this super easy and delicious lunch ready in 5 minutes.


Ingredients:

• 500g fresh chicory
•1 tbsp extra virgin olive oil
• 2 garlic cloves
• 1/2 red chili
•1/3 tsp salt
• 150g cooked beans
• 2 or 3 slices of sourdough bread
•2 tsp hemp seeds

Preparation:

Clean the chicory removing the base of the stems and all the ruined leaves. Wash it well and cook it in boiling water for 5 minutes.

Remove the chicory from the water and let it drain (you can squeeze it with your hands if you are short of time). Don’t throw the water away, it’a really tasty and you can drink it as an herbal tea! It’s a little trick that my great grandma taught me 🙂

Sautè the oil and garlic in a non stick pan until golden brown. Add the chili, the squeezed chicory and the salt and cook at high heat for 10 minutes.

Add the beans and cook another 3 to 4 minutes.

Toast your sourdough bread and serve with the fried chicory and beans and the hemp seeds on top.
