Vegan Lentil Curry

I may have never been to India, and I may not have been to many authentic Indian restaurants… But I definitely know what I like in a classic Indian dish!

I like it creamy, spicy, with a hint of sweetness and vegan!!

Combine all those things together, and you get this delicious Vegan Lentil Curry.

 

 


 

Ingredients:

• 1 tbsp extra virgin olive oil

• 2 cloves of garlic, minced

• 1 white onion, diced

• 2inch piece of ginger, grated

• 1 tsp turmeric

• 1 tsp cumin

• 1 tsp garam masala

• 1 tsp chili powder

• 2 tsp curry powder

• 120g lentils

• 230ml water

• 1 can tomato sauce

• 1 can full-fat coconut milk

• sat and pepper to taste

• 1/2 lemon juice

 

Method:

1. Sauté the onions, garlic, and ginger with the olive oil until the onions are soft and translucent.

2. Add the spices, mix it all together, and let it cook for a few minutes to get the spices fragrant.

3. Add the lentils, tomato sauce and water and cook at low heat with a lid on for 25 minutes.

4. When the lentils are well cooked, add the coconut milk and adjust salt and pepper to taste.

5. Cook for another 10 minutes.

6. Turn the heat off, add the lemon juice, and serve with white rice and fresh coriander on top.
